Sakai Shuzo Sake Brewery, the brewery behind iconic and high end Sake brand GOKYO in Yamaguchi prefecture, is releasing a new Junmai Daiginjo Hanahonori.

This is a pure rice Junmai Daiginjo sake is made with red cherry and red yeast and using 100% Yamada-Nishiki from Yamaguchi Prefecture and just 800 bottles will be made, with the local trading company Yamaguchi Co., Ltd. selling this limited edition.

Red yeast is a mutant of today’s No. 10 yeast that produces red pigment in the rice mashing process.
