Illustrator Hiroki Nishiyama and this Yamagata Sake Brewery have released their newest working collaboration to rebrand Rokassen’s Sparkling sake brand “Hitotoki”
Twenty years have passed since the release of the “Journal Junmai Shiro” which saw sake experience its first sparkling boom, since then, the sparkling sake popularity has been coming and going, since we are on the wave on making sparkling sake a trend again, Rokkasen thought it was a good time to relabel their signature Sparkling sakes.
It is made by the same sparkling wine method called “second fermentation in bottle” without adding carbon dioxide. When poured into a glass, it is characterized by a refined sake fragrance that is not overly strong and smooth, with an exquisitely sweet and sour taste balance.
