Kazuma Shuzo launches the first Sake Liquor made with Kaga-Bocha Tea

Kazuma Shuzo Co., Ltd has been brewing sake and soy sauce for a century and a half since its establishment, and have been until recently the core of the business.

They have now launched a brand-new Sake base liqueur highly scented with Ishikawa Prefecture own brand of tea, known as Kaga-Bocha, a type of Houjicha tea.

In 2019, however, Kazuma Shuzo started the operations of non-koji related liquors in a recovered old winery from the area which just ceased-business and the equipment still intact and suitable to convert to better use, so it was the perfect setting and occasion for a brand-new range of liquors.

As Kazuma Shuzo explains, they infuse sake with Kaga Bocha to later extract the flavour of the rich roasted stem leaves. The brewery itself, have been making already different types of Umeshu (Plum Wine), so this type of drink is not a new thing within the business, they just needed the suitable premises to dedicate to it.

Having “Chanomi Nakama Co., Ltd” a dedicated tea retailer as joint collaborator makes it the perfect partnership to bring tea knowledge to the project.

Chanomi Nakama believes that Japanese tea is not just a classic element to be enjoyed in traditional ways, but it is also an essential part of modern life, this project highlights such thoughts by blending a remarkable traditional ingredient into fusion to bring a new way of perfection and enjoyment of sake and tea.

The Kaga Bocha Tea® is a type of Hojicha tea which originated in the Kaga region of Ishikawa Prefecture and whose stems, not the tea leaves, are roasted locally using a traditional method, enhancing a unique and fragrant scent that has been popular with the people of Ishikawa since ancient times.
