In 1990, Hakutsuru started researching sake rice cultivation with the aim of producing a sake rice as good as Yamada-nishiki, known to be the king of sake rice.

The company with headquarters in Hyogo Prefecture – will launch two new sake of their brand “Hakutsuru-nishiki” series on March 23, 2020.

The new “Shoun Brand” will be using the in-house cultivated rice, which has under development for 10 years and just 2 years on the company’s own rice fields with underground water from the Rokko Mountains nearby.

The company has been working on a project for over two decades to bring a type of sake rice aiming to dethrone the king of Sake rice and able to boost the saturated Yamada-nishiki market. This is great news as most of sake producers rely heavily on Yamada-nishiki, so we hope now only that the customers enjoy this new 2 sakes and we hoping to see more varieties of it come into the market in follow years to come.
