The Japanese veteran bartender Yuki Yamazaki founded THE JAPANESE BITTERS further to his experiences gained overseas first in London and later, Toronto, where he used to try and make his home-brew creations to add a signature touch on his cocktail creations.

In 2015, he went to study to HermanJansen distillery in the Netherlands, where he gained further knowledge to take on his home-bitters right to the next level and make his way back to Japan to start THE JAPANESE BITTERS company, where he received support from the Honbo Distillery.
